Heat olive oil in a large cast iron skillet over medium heat.
Add sausage and cook, breaking it apart with a spatula, until browned (8–10 minutes).
Stir in the diced onion and cook with the sausage mixture for another 2–3 minutes, until the onion begins to soften.
Add diced sweet potatoes and season with salt, garlic powder, and pepper. Lower the heat to medium-low and cover the skillet.
Cook for 10–15 minutes, stirring occasionally. Add a splash of water if needed to help the sweet potatoes steam and soften.
Once the potatoes are fork-tender, stir in the diced apples. Cover and cook for another 8–10 minutes, or until apples are softened to your liking.
Serve warm, topped with a fried egg or other optional add-ins. Enjoy!
