Sweet Potato Sausage and Apple Hash

Equipment

  • Large cast iron skillet or large nonstick skillet
  • cutting board
  • sharp knife
  • Wooden spoon or spatula

  • Airtight container (for leftovers)

Ingredients
  

  • 1 pound breakfast sausage pork, turkey, or chicken apple sausage
  • 1 large yellow onion diced
  • 2 medium sweet potatoes peeled and diced
  • 2 honeycrisp apples diced
  • 1 tablespoon olive oil or butter
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • Black pepper to taste
  • Splash of water as needed

Instructions
 

  • Heat olive oil in a large cast iron skillet over medium heat.
  • Add sausage and cook, breaking it apart with a spatula, until browned (8–10 minutes).
  • Stir in the diced onion and cook with the sausage mixture for another 2–3 minutes, until the onion begins to soften.
  • Add diced sweet potatoes and season with salt, garlic powder, and pepper. Lower the heat to medium-low and cover the skillet.
  • Cook for 10–15 minutes, stirring occasionally. Add a splash of water if needed to help the sweet potatoes steam and soften.
  • Once the potatoes are fork-tender, stir in the diced apples. Cover and cook for another 8–10 minutes, or until apples are softened to your liking.
  • Serve warm, topped with a fried egg or other optional add-ins. Enjoy!
