Quick and Easy Instant Pot Pork Roast

Equipment

  • 1 Instant Pot or a pressure cooker equivalent with a saute function and timer
  • 1 cutting board
  • 1 knife
  • 1 wooden spoon

Ingredients
  

  • 3 lbs boneless Boston butt pork roast
  • 4-6 red potatoes quartered
  • 1 large onion cubed
  • 8-10 baby carrots
  • 2 cups beef broth
  • 2 tbsp red wine vinegar
  • 1 tbsp butter
  • dry seasonings of your choice

Instructions
 

  • Set your pressure cooker to the sauté function and melt 1 tbsp of butter (or a little bit of olive oil)
  • While the butter melts, season your 3-pound pork roast with garlic powder, black pepper, and any other desired seasonings in a small bowl.
  • Sear the pork roast on each side for 2-3 minutes until it gets a nice brown color.
  • Once browned, remove the roast and set it aside.
  • Pour 2 tbsp of red wine vinegar into the pot to deglaze it. Use a wooden spoon to scrape up the browned bits from the bottom of your Instant Pot,
  • Add in the 2 cups of broth.
  • Slice the pork roast into 0.5-1 inch thick slices to decrease the cooking time.
  • Return the sliced pork to the pot, along with the quartered red potatoes, cubed onion, and baby carrots.
  • Secure the lid, turn the valve to sealing, and cook on manual high pressure for 20 minutes.
  • After the cook time is complete, allow the Instant Pot to perform a natural pressure release for at least 25 minutes.
  • Serve!

Notes

For an added touch, make a quick gravy using the liquid in the pot. A cornstarch slurry can thicken it up.
