Preheat your oven to 350 degrees.
Line a baking sheet with parchment paper.
Add garbanzo beans, peanut butter, maple syrup, baking powder, salt and vanilla extract to a food processor.
Blend until well incorporated.
Fold in chocolate chips with a spatula or give then a good mix with a spatula.
Using a cookie scoop or a spoon, measure out about 1/4 cup of dough for each cookie. Roll it into a ball and then flatten into a cookie shape.
Place the cookie discs on your prepared baking sheet and bake for about 10 minutes. Watch for them to turn a lovely golden brown - a sign they're done just right.
Allow them to cool on a baking rack before eating.
(Optional) Sprinkle with powdered sugar for added flavor.
