Healthy Chocolate Chip and Peanut Butter Chickpea Cookies

Ingredients
  

  • 15 oz garbanzo beans
  • 1 cup peanut butter
  • 1/4 cup maple syrup
  • 1 cup dark chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 tbsp powdered sugar optional for sprinkling

Instructions
 

  • Preheat your oven to 350 degrees.
  • Line a baking sheet with parchment paper.
  • Add garbanzo beans, peanut butter, maple syrup, baking powder, salt and vanilla extract to a food processor.
  • Blend until well incorporated.
  • Fold in chocolate chips with a spatula or give then a good mix with a spatula.
  • Using a cookie scoop or a spoon, measure out about 1/4 cup of dough for each cookie. Roll it into a ball and then flatten into a cookie shape.
  • Place the cookie discs on your prepared baking sheet and bake for about 10 minutes. Watch for them to turn a lovely golden brown - a sign they're done just right.
  • Allow them to cool on a baking rack before eating.
  • (Optional) Sprinkle with powdered sugar for added flavor.
