Creamy Taco Soup

Equipment

  • 1 large pot
  • 1 wooden spoon

Ingredients
  

  • 2 lbs hamburger meat
  • 16 oz cream cheese room temp
  • 1 medium yellow onion
  • 20 oz green chilies and tomatoes (rotel)
  • 1/2 cup heavy cream
  • 2 cups beef stock
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 tsp pepper

Instructions
 

  • Brown hamburger meat in a large pot and drain.
  • Dice onion and add to the hamburger meat. Cook until translucent.
  • In a separate small bowl, mix all dry ingredients.
  • Add dry ingredients to hamburger and onions. Sir until well incorporated.
  • Once onions are translucent, add cream cheese and stir until melted and well incorporated in the hamburger mixture.
  • Add the green chilies and tomatoes, beef stock and heavy cream.
  • Allow to simmer for at least 30 minutes.
  • Spoon into a bowl and top with your favorite ingredients (cheese, sour cream, green onions).

Notes

You can substitute the dry ingredients for 2 packets of taco seasoning.
