Sweet and Spicy Chili Sauce

Ingredients
  

  • 3/4 cup water
  • 1/2 cup plain rice vinegar
  • 3/4 cup granulated white sugar
  • 1/2 teaspoon salt
  • 2 tablespoons chili crisp
  • 3 tablespoons cool water for the slurry
  • 2 tablespoons cornstarch

Instructions
 

  • Add 3/4 cup water, rice vinegar, sugar, salt, and chili crisp to a small saucepan.
  • Bring the mixture to a low simmer over medium heat, stirring until the sugar dissolves.
  • Let the mixture simmer gently for 5 minutes.
  • In a small bowl, whisk 3 tablespoons of cool water with the cornstarch until smooth.
  • Slowly pour the cornstarch slurry into the sauce while stirring constantly.
  • Immediately remove the saucepan from the heat once the slurry is incorporated.
  • Allow the sauce to cool. It will thicken as it cools. Use right away or refrigerate in an airtight container.

Notes

Use plain, unseasoned rice vinegar.
Chili crisp brands vary in salt and heat, so adjust to taste.
Keep the mixture at a gentle simmer rather than a hard boil.
The sauce will look thinner while hot and thicken as it cools.
Refrigerate and use within about two weeks.
