Cut avocado in half, remove the avocado pit, and scoop out the flesh into a large bowl.
Use a potato masher or fork to mash to your preferred consistency (chunky or smooth).
Add lime juice, garlic, kosher salt, cilantro, tomatoes, red onion, and black pepper.
Mix well and taste. Add more lime juice, salt, or pepper if needed.
Serve immediately with homemade tortilla chips or store in an airtight container with a layer of plastic wrap pressed against the surface to prevent browning.
