Lemon Glazed Blueberry Butter Swim Biscuits

Ingredients
  

  • 1 stick butter (1/2 cup)
  • 2 cups all purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 2 cups buttermilk
  • 1 cup blueberries
  • 1 teaspoon lemon zest
  • 1-2 tablespoons lemon juice
  • 1 cup powdered sugar

Instructions
 

  • Preheat oven to 400°F and place butter in the baking dish to melt in the oven.
  • In a medium bowl, mix flour, sugar, baking powder, and salt.
  • Stir in buttermilk until a sticky dough forms.
  • Gently fold in blueberries and lemon zest.
  • Remove baking dish from oven and tilt to coat with melted butter.
  • Pour biscuit dough into the dish and spread evenly.
  • Bake for 30–35 minutes, until golden brown.
  • In a small bowl, mix powdered sugar with lemon juice until smooth.
  • Drizzle glaze over the warm biscuits and serve.
