Optional: red pepper flakes, olive oil, red bell pepper or other bell peppers
Instructions
Set instant pot to sauté feature and brown the italian sausage, breaking it apart with a wooden spoon. Remove and set aside.
Add 1–2 tablespoons of chicken broth to deglaze the pot, scraping the bottom.
Add pasta and spread evenly across the bottom of the pot.
Pour in remaining chicken broth and heavy cream without stirring. Press pasta down gently until submerged.
Sprinkle garlic powder, oregano, and pepper over the top of pasta.
Layer cream cheese slices on top, then pour fire roasted tomatoes over the top without stirring.
Place lid on, set instant pot to high pressure, and cook for 4 minutes.
Carefully perform a quick release using the pressure valve.
Remove lid and stir well to create a creamy tomato sauce.
Add cooked sausage and baby spinach, stir until spinach wilts.
Serve topped with parmesan cheese.
