Add 1 cup of sugar to a bowl.
Add 1 teaspoon of water and mix gently with a fork. Add the second teaspoon of water and mix again until the sugar has the texture of wet sand.
Spoon the damp sugar into a silicone mold, filling each cavity.
Press the sugar down firmly using the back of a spoon or bench scraper so it packs evenly.
Let the sugar cubes air dry at room temperature for 24 hours.
Once fully dry, gently remove from the mold.
Store in an airtight container. Use 1–2 cubes per cup of coffee or tea.
