  • whisk
  • fine mesh strainer
  • Silicone molds
  • Freezer-safe container or bag
  • Glass jar for temporary storage

Ingredients

  • 1.5 cups water
  • 1 cup dried elderberries
  • 2 cinnamon sticks
  • ½ cup water for arrowroot mixture
  • 1 tablespoon arrowroot powder
  • ½-1 cup honey

Instructions

  • Bring 1.5 cups of water to a boil. Add dried elderberries and cinnamon sticks.
  • Reduce heat and simmer for 30–45 minutes until the liquid reduces.
  • In a separate bowl, whisk the arrowroot powder with ½ cup of water and set aside.
  • Strain the elderberries and cinnamon sticks from the pot.
  • Return the liquid to low heat and whisk in the arrowroot mixture until thickened.
  • If the syrup becomes too thick, add water 1 tablespoon at a time until you reach your desired consistency.
  • Allow the mixture to cool below 104°F. Stir in the honey, and add lemon juice or maple syrup if desired.
  • Pour the syrup into silicone molds and freeze until firm.
  • Carefully remove the tea bombs. They will remain slightly pliable, so handle gently.
  • Transfer them to a freezer-safe container or bag for storage.
  • To use, place one bomb into a mug of hot water or melt it into an already-made tea like green tea, Earl Grey, or any herbal tea you enjoy.
