Ingredients
1cupwaterequal parts water and sugar
1cupwhite sugaror brown sugar for a different flavor
1heaping cup fresh strawberrieschopped (remove green tops)
1tablespoonlemon juiceoptional for enhanced freshness
Instructions
In a medium saucepan over medium-high heat, combine 1 cup of water and 1 cup of sugar. Stir occasionally until the sugar dissolves completely.
Once the sugar dissolves, add the chopped strawberries and bring the mixture to a gentle boil.
Reduce the heat to low and let the syrup simmer for about 20 minutes. Stir occasionally and use a potato masher to press the strawberries for extra juice. The syrup should turn a deep red color.
Remove from heat and pour the syrup through a fine mesh strainer or fine mesh sieve into a heatproof bowl or measuring cup. Press down on the strawberries to extract all the liquid.
Let the syrup cool to room temperature before transferring it to a mason jar, glass bottle, or airtight container. Store in the refrigerator for up to 2 weeks.
Notes
For a thicker syrup, simmer a few minutes longer to reduce excess water.
Store in a freezer-safe container for up to 3 months.
Use in strawberry lemonade, cocktails, ice cream, or as a topping for pancakes and cake layers.
