Easy Strawberry Simple Syrup Recipe

Prep Time 5 minutes
Cook Time 20 minutes
Servings 1.5 cups

Equipment

  • Medium saucepan or small saucepan
  • Wooden spoon or silicone spatula
  • Fine mesh strainer or fine mesh sieve
  • Heatproof bowl or measuring cup
  • Mason jar, glass bottle, or airtight container for storage
  • Potato masher (optional)

Ingredients

  • 1 cup water equal parts water and sugar
  • 1 cup white sugar or brown sugar for a different flavor
  • 1 heaping cup fresh strawberries chopped (remove green tops)
  • 1 tablespoon lemon juice optional for enhanced freshness

Instructions

  • In a medium saucepan over medium-high heat, combine 1 cup of water and 1 cup of sugar. Stir occasionally until the sugar dissolves completely.
  • Once the sugar dissolves, add the chopped strawberries and bring the mixture to a gentle boil.
  • Reduce the heat to low and let the syrup simmer for about 20 minutes. Stir occasionally and use a potato masher to press the strawberries for extra juice. The syrup should turn a deep red color.
  • Remove from heat and pour the syrup through a fine mesh strainer or fine mesh sieve into a heatproof bowl or measuring cup. Press down on the strawberries to extract all the liquid.
  • Let the syrup cool to room temperature before transferring it to a mason jar, glass bottle, or airtight container. Store in the refrigerator for up to 2 weeks.

Notes

For a thicker syrup, simmer a few minutes longer to reduce excess water.
Store in a freezer-safe container for up to 3 months.
Use in strawberry lemonade, cocktails, ice cream, or as a topping for pancakes and cake layers.
