Crispy Bang Bang Potatoes

Ingredients
  

For the Potatoes

  • 2 lbs potatoes yellow or russet
  • 2 tbsp olive oil
  • 1 tbsp minced garlic
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp paprika
  • Kosher salt and black pepper to taste

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce or sweet Thai chili sauce
  • 1 tbsp lemon juice
  • Optional: splash of rice vinegar

Instructions
 

  • Preheat oven to 400 degrees F.
  • Dice potatoes and pat dry to remove excess water.
  • In a large bowl, toss potatoes with olive oil, minced garlic, garlic powder, onion powder, paprika, salt, and black pepper.
  • Spread potatoes in a single, even layer on a large rimmed baking sheet.
  • Bake in the center of the oven for 45 minutes, flipping halfway through, until deep golden brown and crispy.
  • In a small bowl, whisk together mayonnaise, sweet chili sauce, lemon juice, and rice vinegar (if using).
  • Transfer cooked potatoes to a serving dish and drizzle with bang bang sauce or serve as a dip.
  • Garnish with green onions and sesame seeds before serving.
