Spread potatoes in a single, even layer on a large rimmed baking sheet.
Bake in the center of the oven for 45 minutes, flipping halfway through, until deep golden brown and crispy.
In a small bowl, whisk together mayonnaise, sweet chili sauce, lemon juice, and rice vinegar (if using).
Transfer cooked potatoes to a serving dish and drizzle with bang bang sauce or serve as a dip.
Garnish with green onions and sesame seeds before serving.
