Creamy Garlic Butter Chicken and Rice

Equipment

  • large skillet
  • air fryer or oven

Ingredients
  

  • 4-5 boneless skinless chicken thighs or thin chicken breasts
  • 2 tbsp butter
  • 4-5 cloves garlic minced or chopped
  • 2 cups chicken broth
  • 1 cup white rice wild rice blend, or long-grain rice
  • ¼ cup heavy cream
  • ¼ cup parmesan cheese grated
  • ½ tsp onion powder
  • ½ tsp italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley or chives chopped (for garnish)
  • Optional: A splash of white wine for extra depth

Instructions
 

  • Heat a large skillet over medium-high heat and melt the butter. Add the boneless skinless chicken thighs and cook for about 3-4 minutes per side until golden brown.
  • Transfer the browned chicken to an air fryer and cook at 375°F for 15 minutes or until fully cooked. (Alternatively, use a large oven-safe skillet and bake at 375°F for 15-20 minutes.)
  • In the same skillet, add the minced garlic and sauté over medium heat until fragrant.
  • Pour in the chicken broth and add the white rice, wild rice blend, or long-grain rice. Stir in the italian seasoning, onion powder, black pepper, and salt. Bring to a simmer, cover, and cook on low heat for about 15 minutes until the rice is fluffy and most of the liquid is absorbed.
  • Stir in the heavy cream, parmesan cheese, and an optional splash of white wine. Let it simmer for 2 minutes until the creamy sauce thickens.
  • Slice the cooked chicken into bite-sized pieces and return it to the skillet. Stir to coat with the creamy garlic butter sauce.
  • Sprinkle with fresh parsley and serve warm. Enjoy!

Notes

Storage Tips
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat over medium heat with a splash of chicken broth or sour cream for the best flavor.
Freezing is not recommended, as the creamy sauce may separate.
