Creamy French Onion Skillet Chicken

Equipment

  • large skillet
  • Plate (for setting aside chicken)
  • Oven-proof dish (if skillet is not oven-safe)
  • Aluminum foil or lid
  • Knife and cutting board
  • Measuring cups and spoons

Ingredients
  

  • 2 lbs boneless, skinless chicken thighs or chicken of your choice
  • Salt and pepper to taste
  • 2 tbsp butter
  • 1 medium yellow onion, diced
  • 2 tbsp flour
  • 8 oz beef consomme
  • 1/2 cup beef broth
  • 1/4 cup heavy cream
  • 8 oz shredded cheese of choice

Instructions
 

  • Season chicken with salt and pepper.
  • In a skillet, brown chicken in butter over medium-high heat; set aside.
  • In the same skillet, cook diced onion over medium heat until tender and caramelized.
  • Stir in flour, then slowly add beef broth and consomme and continue stirring. Add heavy cream once the flour is incorporated.
  • Return chicken to skillet, cover, and bake at 350°F until the internal temperature reaches 165°F (about 30-45 minutes).
  • Sprinkle cheese over chicken, bake uncovered until melted (about 5-10 minutes).
  • Enjoy over rice or your choice of side.
