Season chicken with salt and pepper.
In a skillet, brown chicken in butter over medium-high heat; set aside.
In the same skillet, cook diced onion over medium heat until tender and caramelized.
Stir in flour, then slowly add beef broth and consomme and continue stirring. Add heavy cream once the flour is incorporated.
Return chicken to skillet, cover, and bake at 350°F until the internal temperature reaches 165°F (about 30-45 minutes).
Sprinkle cheese over chicken, bake uncovered until melted (about 5-10 minutes).
