Place 1.5 lbs of cubed boneless skinless chicken thighs in an airtight container or Ziplock bag.
Add the zest of one lemon, 2 tbsp avocado oil, juice from half a lemon (or 1 tbsp), 2 tsp salt, 1 tsp parsley, 1 tbsp minced garlic, 1/4 cup grated Parmesan cheese, and black pepper to taste.
Seal the container or bag and shake well to coat the chicken evenly.
Marinate in the refrigerator for 30 minutes.
Preheat the air fryer to 400°F.
Lightly spray the air fryer basket or tray with nonstick spray.
Arrange the marinated chicken pieces in a single layer in the air fryer basket or tray.
Cook at 400°F for 10-15 minutes, shaking the basket or turning the chicken pieces halfway through the cooking time.
Check that the chicken reaches an internal temperature of 165°F using a meat thermometer.
Remove the chicken from the air fryer and serve hot with your favorite sides and dipping sauces.
